We have a long history making specialty food products. In the 80's and 90's we started making specialty cheeses and other niche dairy products like mascarpone and cajeta from Argentina (also called 'dulce de leche'). Our family is from Argentina, we're picky about our food and especially our wine.
In those days we were the Olympia Cheese Company and focused on cheese and dairy. We even made whey protein powders. Back then, we used to spray liquid whey (a by-product of making cheese) in the back fields. Whey was something to get rid of, we probably had the world's strongest squirrels when we were accidentally feeding them a diet of liquid whey. Then we realized that it was full of high-quality protein and started drying it.
A lot has changed since then. A new city was incorporated and now our address is in Lacey, and we got out of the cheese business and into the egg business.
Now we're focused on egg protein. We've invented a way of crystallizing eggs at low-temperature so that they keep all of their fresh flavor and functionality. Our egg crystals are the only dehydrated egg that actually tastes just like fresh eggs. And since we focus on the fundamental processing technology itself, we don't need to add junk to our all-natural egg to make it taste good.
